What was the point in having Sid as the Garbage Man?

I mean they didn't even acknowledge who he was and Woody didn't even seem to notice/recognize him. What was the pointe of him being in the film?

It's an easter egg, it serves no purpose to story, if removed nothing would change. But it was used to either save money by not having to animate a different character and/or for observant fans to notice and pay more attention to the movie for future easter eggs.

Like the luxo ball in every pixar movie, lotso in up, the incredibles comic book in finding nemo, the pizza planet truck in brave. Or like rapunzel and eugene in frozen. It would have cost more money to animate something completely new, so they took an object from a pre-existing movie and use it minimally not to arouse suspicion.

The best part of it is that it gets people talking, there are hundreds of posts about sid being the garbage man, now if they just gave us an original face the movie would not be as talked about as it is now.

That IS the point...it's fun to notice these things without having them shouted out to you.
