I vote for The Pillars of the Earth by Ken Follett. Set in 12th century England, it's an epic that contains many layers of internal struggle stories.
The travails of the country folk during The Anarchy, a savage time of English civil war that devastated the countryside and produced much death and misery among the peasantry, provides the context for the struggles of ambitious men and pious men to create a fortified town, Kingsbridge, and a cathedral of revolutionary design therein. Within that story is the story of the emergence of a gentrified class of craftsmen and merchants as trade expands during the end of the Dark Ages. Within that is a story of deceit and hope as several interlocked families struggle for power and, for many, simple livelihood. And finally, it is a gripping story of the aspirations, accomplishments, and failures of individual men and women within those families.
The Pillars of the Earth was the first novel that gave me a clue regarding the incredible developments in English culture in the generations following the Norman invasion and it provides a much more credible perspective on England's coming of age than does, for example, Robin Hood. What is unique to The Pillars of the Earth is it's "street-level" perspective, quite different from the aristocratic perspective of most English epics. It made me think that perhaps people then were not so different from people today.

I would like to see Gore Vidal's Creation made into a movie, and The Weaker Vessel, by Antonia Fraser, about women in 17th Century England. I just finished the book 'The Ritual' and I would love to see that made into a film, though it's horror and not history.

"The Years of Rice and Salt", by Kim Stanley Robinson. Takes place in an alternate world where the Black Death of the 14th century killed the entire population of Europe, leading to the Islamic World and China becoming the planet's two dominant and rival civilizations. Covers a lot of fascinating alternate-history episodes, such as the Chinese discovery of the Americas, the development of the scientific method in Islamic Central Asia and the Industrial Revolution in India, and the re-population of Europe by North Africans and Middle-Easterners. It would make a great mini-series, and would give the rather neglected genre of Alternate History more exposure.

A good movie adaptation of Stendhal's The Red and the Black that would have made the author proud (if he knew what cinema was). Better make it an European production, not sure an American would make a movie worth the book. And if the film is successful enough, make a movie adaptation of Stendhal's other work, The Charterhouse of Parma.
I always wanted to see Terry Gilliam making movies adaptations of Candide by French philosopher Voltaire and The Clouds by Ancient Greek playwright Aristophanes. His style is perfect for these books, specially the first. The same way irony is a trademark of Voltaire it was a trademark of Monty Python.

I'm currently reading Mr. S by George Jacobs. It's about Frank Sinatra and very insightful. I think it would be a good movie if adapted right by someone like Speilberg or Scorsese.
