It's incredible. I don't eat pasta, but I enjoy spaghetti squash being used as pasta.

Plus, you can pan fry it with roasted veggies. Very good.

I love eggplant but mostly because I grew up having it. The easiest thing would be to cut it in rounds, toss with olive oil and whatever spices you like then bake at 400 degrees for 10 minutes each side. The Japanese eggplant is better for this because it’s longer and skinnier but the recipe works just fine for the other type. Otherwise it can be cut and added to stir fry and it’s especially good when added to stew. Or here’s another tasty recipe: https://www.crunchycreamysweet.com/baked-eggplant/
