How do you cut bell peppers?

Down the middle or cut off the head?

Saw in Grandpa's kitchen, him and his family take off the head.

Is that the right way?

I cut off the head. I get annoyed if I find one that's been cut down the middle, and all the seeds etc just left there for the next person to take care off.

Yeah, but I cut the head evenly and use the fleshy part of the top, so it evens out. After cutting the top, I remove all the seeds.

Do you remove the webs too?

I always make sure to cut those away as well as taking the head off.

Depends what I'm making. If it's rustic or the peppers disintegrate in the sauce no.

Top and tail and keep those bits for a salsa or something.

Slice once through the middle section from top to bottom, then roll it out like a rug. Use your knife to slide along the inside flesh to remove seeds and white flesh.
Then you can slice equal sized strips of pepper.
