I made "potato cakes" for breakfast with some leftover mashed potatoes.
Shaped it into a patty, cooked them in a skillet until they were crisp on the outside, topped it with some bacon and avocado, and then a fried egg to top it off.

I've made similar using the star side of a grater and added a tiny bit of flour. SO GOOD!
