The thing about Star Wars, is that it's really a movie about religion and science. If you think about it, the Force is something every scientist knows how to control. So a Jedi is nothing more than a scientist.

I think The Mandalorian has potential to substantially improve, but I won't get my hopes up too much. What it is is fine enough, I guess.
Currently, I'm just looking forward to the Obi Wan series, and then I'm probably going to call it quits on new Star Wars content.
