Why don't vampires have the bite scars on the neck?

From being sired? We know they scar (Spike).

Presumably they only scar under special circumstances; maybe as a result of injury while vamped (I nearly typed woged). Every other injury tends to heal otherwise. Maybe Spike kept that one alive somehow, to intentionally give himself a scar, as a memento from his first Slayer kill.
The real reason he has it of course, is it was a real scar James Marsters got from a mugging.

Because the bite marks disappear when a human is turned into a vampire. This is clearly shown in Helpless.

The point the OP is trying to make is, Spike's eyebrow scar, which he got when he fought the Slayer during the Boxer Rebellion, is exactly that, a scar from what may have arguably been a fairly superficial wound. So might he be able to have that scar, but scars like from when they were turned - which were incurred before they had vampire healing abilities - heal more effectively and leave no trace/

There was an interesting premise I recall, from either the Blade franchise, or the short lived series Moonlight (which was created by one of the writers from Angel, and bore some striking similarities). The idea was that their wound received in the course of being turned (and I assume any other scars they might have received before that) persisted, even as other wounds received after they became vampires healed without a scar; on account that it was received while they were still human.

You didn't understand my reply.

Bite marks are different from other scars. Bite marks are an important part of vampire mythology. For example, in Salem's Lot bite marks disappear when the victim dies. Mike Ryerson's bite marks disappear when he dies, but he still has scars on his stomach from autopsy.

I'm pretty sure they just thought it looked cool and then tried to tie it into the story.

This. Vampires have been shown multiple times in 'Buffy the Vampire' and 'Angel' that they have the power to heal and you only need to look at some episodes where Angel got burnt from by the sun and went back in the darkness and healed. Bite marks are also not seen very often when the person has become a vampire in other movies and TV shows with vampires and it is mostly werewolf bites you see 'cause they hide them when they are in their human form and know somebody is looking for a werewolf.

and there's that time when Darla had a stake shoved into her hand, only for it heal with no marks left behind in the next scene.

Neither slayers nor vampires usually scar.

The reason Spike had a scar was because there have been some special circumstances why he had that scar.

Of course the reallife reason was simply that the actor had said scar.
